This Didn’t Start With a Dream. It Started With a Diagnosis.
I didn’t open a gluten-free bakery and bistro because it sounded fun.
I opened it because I had to.
Celiac isn’t a wellness trend in my world. It’s a life-altering diagnosis. After years of bland, dry, over-processed “alternatives” and broken promises from big brands, I got tired of settling. I didn’t want “good for gluten-free.” I wanted good, period.
So I stopped looking and started baking.
That first loaf?
Complete trash.
But I kept going. Testing. Failing. Learning. Baking late into the night with notebooks full of tweaks and notes and “what ifs.” Slowly, something shifted. A crust that actually crunched. A crumb that didn’t collapse. A donut worth waking up for. I cracked the code.
Rebel Rise was born from that obsession. What started in my kitchen turned into a movement. One that refuses to accept the idea that gluten-free food should be lesser than. This isn’t about following the rules. It’s about rewriting them.
Who I Am
Before Rebel Rise, I spent over a decade scaling businesses. I rebuilt sales teams, closed multi-million dollar deals, and led turnarounds that took brands from barely surviving to record-breaking.
Because this?
This is personal.
This is about my body, my health, and my family.
This is about every person who’s ever had to choose between safety and flavor.
This is about changing the story people tell themselves when they think “gluten-free means sacrifice.”
