Celiac disease made food feel like a constant battle. Every aisle, every menu, every “gluten-free” label came with a warning sign. So I stopped settling and got to work.
The first attempts were rough. Brick loaves. Crumbly cookies. Donuts that weren’t worth the calories. But I kept baking. Testing. Obsessing. Until the flavor finally matched the mission: make gluten-free food so good, it ruins everything else.
Rebel Rise was never about playing it safe. It’s about raising the bar. And now we’re here. A scratch bakery and bistro in Omaha making unforgettable food with no gluten, no fillers, and no apologies.
